  • Prep: 20 mins
  • Cook: 15 mins
  • Yields: 4 servings

Ingredients

2/3 cup Homemade Ketchup (recipe below)

1/2 tsp ground chipotle pepper

1/2 tsp smoked paprika

1/2 tsp onion powder

2 tsp apple cider vinegar

1 lb natural, lean ground turkey

3 tbsp chopped fresh cilantro

1/4 cup gluten-free organic rolled oats (not quick cook)

1/2 tsp chili powder

1/2 tsp garlic powder

1/2 tsp sea salt

1/4 tsp freshly ground black pepper

4 brown rice tortillas

1 cup fresh baby spinach leaves

8 tomato

1 avocado, sliced

Directions

1Combine the ketchup, chipotle pepper, paprika, onion powder, and vinegar in a small bowl and set aside.

2Combine the turkey, cilantro, oats, chili powder, garlic powder, salt, and pepper in a medium mixing bowl, taking care not to over-mix. (Working with meat too much will make it tough.)

3Form into four 1/2"-thick patties.

4Heat a grill pan over medium heat. Add the patties and cook for 5-6 minutes per side until an instant-read meat thermometer registers 175F in the thickest part.

5Heat a large nonstick skillet over medium heat until hot. Working with one at a time, heat the tortillas on both sides, about 45 seconds per tortilla.

6Lay the tortillas on a work surface and top each one with 1/4 of the spinach, avocado, and tomato slices. Follow by a patty and 2 tablespoons of chipotle ketchup.

7Fold the wraps around the burgers and serve immediately.
