Recipe: Creamy Roasted Avocado

A good friend of mine served this recipe at dinner a year ago, and I’m still thinking about it. It’s that good.

The blend of creamy avocado, roasted garlic, and the crunch of toasted pumpkin seeds is magic. It’s enough to make you forget that you’re eating one of nature’s most perfect superfoods!

Creamy Roasted Avocado

This recipe couldn’t be any simpler – or more delicious! Not only are avocados the perfect superfood full of fiber, omega 3s, and antioxidants, they taste amazing.

  • Prep: 10 mins
  • Cook: 25 mins

Ingredients

2 avocados, halved and pitted (leave skins on)

2 tsp lime juice

1 tsp pureed garlic

1/2 tsp sea salt

2 tbsp pumpkin seeds

Directions

1Preheat oven to 350F and place the avocado halves in a glass baking dish, flesh-side up.

2Sprinkle the flesh of each avocado half with 1/2 a teaspoon of lime juice.

3Spread 1/4 teaspoon of pureed garlic over each half, then sprinkle each with 1/8 tsp of sea salt.

4Bake in oven for about 25 minutes, until tender and creamy.

5Sprinkle 1/2 tablespoon pumpkin seeds on top.

6Turn oven to broil and cook for 1-2 minutes until golden brown.

7Serve with spoons to eat the roasted avocado straight from the skins.
