Recipe: Lemony Roasted Artichoke Hearts

This is one of those side dishes that makes a big impact with very little effort. Less than five minutes of prep, then let a hot oven do the rest of the work!

Artichoke hearts are filling because of their high fiber content, and they’re also a good source of the antioxidant vitamin C. That’s good news for your cellular health. The addition of fresh lemon juice and zest really plays to the artichokes' strengths, resulting in a light, tangy recipe that works beautifully next to richer main dishes like steak or seafood.

Lemony Roasted Artichoke Hearts

This light artichoke recipe makes the perfect veggie side dish for richer main courses like steak and seafood. Filling, full of vitamin C, and so easy!

  • Yields: 4 Servings

Ingredients

2 tbsp olive oil, plush more for the pan

2 (9-ounce) boxes frozen artichoke hearts, thawed

1/4 tsp sea salt

1/8 tsp freshly ground black pepper

2 tsp grated lemon zest

1 tsp lemon juice

Directions

1Preheat the oven to 450°F.

2Lightly dampen a paper towel with a small amount of olive oil and wipe a large rimmed baking sheet with it.

3Combine the 2 tablespoons of oil, artichoke hearts, salt, and pepper in a large bowl and toss to coat.

4Place the artichoke hearts on the prepared baking sheet and roast, stirring occasionally, until browned and tender. 22 to 23 minutes.

5Transfer to a bowl and toss with the lemon zest and lemon juice. Enjoy!
