Recipe: Matcha Blueberry Smoothie

Everything in this smoothie is good for you!

There are so many great-tasting reasons to try it, from the metabolism-boosting green tea to the gut-healing cultured coconut milk. Then there’s avocado and blueberries, superfoods that are packed with fiber and omega-3s.

And, boy, is it pretty! If you’re looking for a vegan brunch recipe that will wow your friends and family, you found it.

(If you don’t want to go the extra trouble of making both layers, you can put all the ingredients in the blender at once – it will taste just as fantastic.)

Matcha Blueberry Smoothie

This yummy matcha smoothie has layers of green tea and blueberry, plus plenty of detoxifying greens, fiber, vegan protein, and healthy fats from avocado.

  • Prep: 10 mins

Ingredients

1 scoop Vanilla All-In-One Shake powder*

10 oz. unsweetened coconut milk

1 cup frozen organic blueberries, divided

1 cup fresh baby kale

1/2 avocado, peeled and pitted

1 tbsp chia seeds or 2 tsp JJ Virgin’s Extra Fiber*

2 tsp matcha powder

1/2 cup unsweetened cultured coconut milk or plain full-fat Greek yogurt (use yogurt only if no dairy intolerance)

Directions

1In blender, combine the All-In-One Shake, unsweetened coconut milk, 1/2 cup of the frozen blueberries, kale, avocado, chia seeds/Extra Fiber, and matcha powder.

2Blend until smooth – your smoothie can be thickened by adding ice cubes or thinned by adding cold water

3Once your smoothie is the desired consistency, pour into glass.

4In blender, blend remaining half cup frozen blueberries and cultured coconut milk/plain full-fat Greek yogurt.

5Pour on top of matcha smoothie to create second layer and enjoy!
