Recipe Variations

The options to customize this recipe are endless! Try pecans or almonds instead of walnuts, or swap out your favorite nut butter for the almond butter in the recipe. And if you're a big chocolate fan, add a tablespoon of raw cacao powder for an extra punch of superfood goodness.

You can also roll your bites in all sorts of yumminess, including unsweetened coconut, chopped nuts, cacao powder, mini stevia-sweetened chocolate chips, or chopped freeze-dried berries. So many ways to make this healthy treat!

The one ingredient that should stay the same with every batch is high-quality, clean protein powder. Look for one with 20-25 grams of protein per serving and no dairy, soy, or artificial ingredients. (My All-in-One Protein Shakes are a great option, and you can find out more about them here…)

So check out the recipe below, and make a batch today. Whether you spoil your kids or surprise your co-workers, there will be plenty of smiles!

These scrumptious little bits of goodness really couldn’t get any better! They taste amazing, are gluten- and dairy-free, low-sugar impact, and full of protein, fiber, and healthy omega-3s.

  • Yields: about 20 bites

Ingredients

2 scoops JJ Virgin All-In-One Protein Shake Powder*

1/2 cup chopped walnuts

1/2 cup cacao nibs

1/2 cup gluten-free organic rolled oats (not quick cook oats or instant oatmeal)

1/2 cup unsweetened almond butter

2 tbsp coconut oil

1 tbsp pure vanilla extract

1/2 tsp ground cinnamon

1/2 tsp Virgin Sprinkles (or to taste)**

dash sea salt

cacao powder, chopped nuts, or shredded unsweetened coconut (for rolling)

Directions

1Pulse the oatmeal in a food processor until the size of small crumbs.

2Add the remaining ingredients, and pulse until well-combined and mixture holds its shape when pressed together. (Be careful not to over-process.)

3Roll the mixture into 1-1/2 inch balls. If desired, roll the finished bites in organic cacao powder, unsweetened shredded coconut, or finely chopped nuts.

4Transfer to fridge to chill completely, then enjoy. Store covered in refrigerator for up to one week.

*Choose your favorite shake flavor and protein type for this recipe – they all work! Our testers’ favorite? Chocolate Plant-Based by a landslide! (Nutrition info is based on using Chocolate Plant-Based as well.)

**Virgin Sprinkles are a healthy sweetener alternative that you can read more about and buy here.
