These no-bake cookie bites make a delicious breakfast, a great pick-me-up during your evening commute, or a guilt-free dessert. Not only do they satisfy all your cravings – sweet, chocolatey, nutty, crunchy – they do it with all-natural ingredients and fantastic nutrition.

Recipe Variations

The options to customize this recipe are endless! Try pecans or almonds instead of walnuts, or swap out your favorite nut butter for the almond butter in the recipe. And if you're a big chocolate fan, add a tablespoon of raw cacao powder for an extra punch of superfood goodness.

These scrumptious little bits of goodness really couldn’t get any better! They taste amazing, are gluten- and dairy-free, low-sugar impact, and full of protein, fiber, and healthy omega-3s.

  • Yields: about 20 bites

Ingredients

2 scoops JJ Virgin All-In-One Protein Shake Powder

1/2 cup chopped walnuts

1/2 cup cacao nibs

1/2 cup gluten-free organic rolled oats (not quick cook oats or instant oatmeal)

1/2 cup unsweetened almond butter

2 tbsp coconut oil

1 tbsp pure vanilla extract

1/2 tsp ground cinnamon

1/2 tsp Xylitol, monk fruit, erythritol, or pure stevia (sweeten to taste)

dash sea salt

cacao powder, chopped nuts, or shredded unsweetened coconut (for rolling)

Directions

1Pulse the oatmeal in a food processor until the size of small crumbs.

2Add the remaining ingredients, and pulse until well-combined and mixture holds its shape when pressed together. (Be careful not to over-process.)

3Roll the mixture into 1-1/2 inch balls. If desired, roll the finished bites in organic cacao powder, unsweetened shredded coconut, or finely chopped nuts.

4Transfer to fridge to chill completely, then enjoy. Store covered in refrigerator for up to one week.
