Recipe Variations

The options to customize this recipe are endless! Try pecans or almonds instead of walnuts, or swap out your favorite nut butter for the almond butter in the recipe. And if you’re a big chocolate fan, add a tablespoon of raw cacao powder for an extra punch of superfood goodness.

You can also roll your bites in all sorts of yumminess, including unsweetened coconut, chopped nuts, cacao powder, mini stevia-sweetened chocolate chips, or chopped freeze-dried berries. So many ways to make this healthy treat!

The one ingredient that should stay the same with every batch is high-quality, clean protein powder. Look for one with 20-25 grams of protein per serving and no dairy, soy, or artificial ingredients. (My All-in-One Protein Shakes are a great option, and you can find out more about them here…)

So check out the recipe below, and make a batch today. Whether you spoil your kids or surprise your co-workers, there will be plenty of smiles!

1/2 cup cacao nibs

1/2 cup gluten-free organic rolled oats (not quick cook oats or instant oatmeal)

1Pulse the oatmeal in a food processor until the size of small crumbs.

2Add the remaining ingredients, and pulse until well-combined and mixture holds its shape when pressed together. (Be careful not to over-process.)

4Transfer to fridge to chill completely, then enjoy. Store covered in refrigerator for up to one week.
