Ah, mashed potatoes! I don’t think there’s another side dish that’s quite as homey or comforting, and it’s a must for any traditional holiday table.

Looking for a healthy, simple side to serve with dinner? This delicious mashed potato recipe is dairy free, gluten-free, and topped off with plenty of fresh herbs!

  • Prep: 10 mins
  • Cook: 25 mins
  • Yields: 4 servings

Ingredients

2 cups organic baby Yukon Gold potatoes (skins on, about 1 lb)

2 cups bone broth or veggie stock

2 tbsp chopped fresh thyme or rosemary

2 garlic, minced

1/2 tsp sea salt

1/4 tsp freshly ground black pepper

Directions

1Cut your potatoes into fourths and boil in the bone broth or stock for 10-15 minutes, until soft.

2Transfer potatoes to bowl and add 1/2 cup of the cooking liquid from the pot.

3Mash with the back of a fork or potato masher.

4Add remaining ingredients and mix well; stir in more broth or stock as needed for desired consistency. Top with more fresh herbs as desired.
