

Coconut Pistachio Avocado Mousse

A fluffy blend of coconut cream, avocado, and pistachios. Healthy fats, fiber, vitamins, and minerals make this the perfect dessert for cell function, gut health, hormone health, energy production, and more.

Ingredients
1/2 cup organic coconut cream (just the cream at the top)
3 tbsp Lakanto® Golden Monk Fruit Sweetener
2 scoops JJ Virgin All-In-One Vanilla Protein Shake (Plant-Based or Paleo-Inspired)
Directions
1Place the can of coconut cream in the refrigerator overnight or for up to 8 hours.
2Place pistachios and chia seeds with 1½ cups of water in a Mason jar with a lid. Shake vigorously for 10 seconds. Then, place the jar inside of the refrigerator for up to 8 hours or overnight. Soaking the pistachios will help soften them, and the chia seeds will expand and thicken.
3Open the can of coconut cream and scoop out just the top part into a ½ cup measuring cup. Place in a blender.
4Cut avocado in half and take out the pit in the middle. Scoop out the flesh into the blender on top of the coconut cream. Blend for 30 seconds.
5Add pistachio and chia seed mixture, monk fruit sweetener, and protein powder into the blender. Blend on medium speed for 1 minute. Scrape down as you go and until the mousse looks whipped. The mousse will be thick, so add more coconut cream as needed.
6Divide into four Mason jars. Top with unsweetened dried coconut flakes and fresh fruit. Enjoy!
Note: Refrigerate organic coconut cream so that the cream rises and solidifies on the top.
