Cold Sesame Gluten-Free Rice Soba Noodles Topped with Organic Chicken

A blend of buckwheat and brown-rice soba noodles lightly tossed in homemade sesame dressing and mixed vegetables for a delicious light meal.

Ingredients

1 package Lotus Foods Gluten-Free Organic Buckwheat & Brown Soba Rice Noodles

¼ cup sesame seeds (save ½ teaspoon for garnish)

3 tbsp sesame oil

2 tbsp coconut aminos

1-½ tsp grated ginger

2 tbsp rice vinegar (unsweetened and unseasoned)

1 tbsp water

2 tsp Golden Monkfruit Sweetener

¼ tsp sea salt

3 to 4 each baby bok choy

1/2 cup grated carrots

2 spring onions (cut on a bias)

4 pieces organic boneless skinless chicken breast (6 oz each piece)

1 tsp sesame oil (for chicken)

1/4 tsp sea salt

1/4 ground black pepper

Dried seaweed for garnish
