Savory Pumpkin Quinoa Fritters

2 tbsp ground flaxseed (mixed with 5 tbsp of water)
1/2 cup canned organic unsweetened pumpkin
3 green onions, diced (only use white part of onion)
1In a large mixing bowl, combine all the ingredients and mix well with a rubber spatula.
2Heat 2 tablespoons of extra-virgin coconut oil in a non-stick pan on medium heat.
3Scoop out a small handful of the mixture and shape into a patty.
4Place quinoa patties into the pan. Cook on one side for 5 to 7 minutes. Then, turn over and repeat the process. Only cook 4 patties at a time to give them space to brown.
5Transfer to a plate. Enjoy!
