Paleo Lemon and Herb Broiled Sole

Sole is a low-mercury fish that’s an awesome source of omega-3s and B vitamins. This Paleo recipe is also quick to make and the flaky, lemony fish is delicious!

Ingredients

4 (6-ounce) wild sole fillets

2 tbsp olive oil

1 tbsp grated lemon zest

1 tbsp chopped fresh parsley

1 garlic clove, minced

2 tsp lemon juice

1/2 tsp sea salt

1/2 tsp coarsely ground black pepper

Directions

1Preheat the broiler. Lightly oil a large baking sheet.

2Combine the oil, lemon zest, parsley, garlic, lemon juice, salt, and pepper in a small bowl.

3Place the fish on the prepared baking sheet and spread the lemon-hern mixture over the top of the fillets.

4Broil until the fish flakes easily with a fork, 3 to 4 minutes.
