Sweet Potato Chai Oat Gluten-Free Muffins

A blend of All-In-One Shake protein powder with old-fashioned gluten-free oats, almond flour, and freshly ground flaxseed. Whip a batch up these sweet treats to curb your cravings in a satisfying healthy way.

Ingredients
1 cup finely ground old-fashioned gluten-free oat flour
1 scoop Reignite Wellness™ Vanilla All-In-One Shake
1 tsp baking powder (aluminum-free)
1 cup organic sweet potato puree (not pie filling) or 1 medium yam (baked and mashed)
½ cup Lakanto® Maple Flavored Sugar-Free Monkfruit Syrup
¼ cup Lakanto® Monkfruit Sweetener, Classic (I also use Birch Benders)
1 "flax egg" (1 tablespoon ground flaxseed and 3 tablespoons water. Mix and set for 15 minutes.)
Suggested toppings: pumpkin seeds, hemp seeds, or chopped almonds
Directions
1Preheat oven to 350 degrees. Place cupcake liners in muffin tin.
2In a large bowl, combine the oat flour, Vanilla All-In-One Shake, almond flour, baking powder, baking soda, cinnamon, nutmeg, cardamom, and salt. Mix together.
3In a separate bowl, combine the sweet potato or yam, coconut oil, monk fruit syrup, monk fruit, vanilla, and flax egg. Mix thoroughly.
4Add in dry ingredients to wet ingredients and mix again.
5Scoop batter into each liner.
6Top each muffin with pumpkin seeds and/or hemp seeds (optional).
7Bake in the oven for 20 to 25 minutes.
8Take out of the oven and let cool.
9Store in an airtight container.
10Can be stored in the freezer for up to 6 weeks in an airtight container.
