

Ingredients
For the Greek seasoning blend:
2 Tbsp granulated garlic powder
1 red pepper, cored, seeded, and diced
1 orange bell pepper, cored, seeded, and diced
2 red jalapeños, cored, seeded, and diced
1/2 cup Lakanto® Monk Fruit Sweetener
1/4 cup Italian parsley, chopped
1/4 cup kalamata olives, chopped
Directions
1Blend together dried spices to make the Greek seasoning blend.
2Place ground turkey in a bowl and sprinkle Greek seasoning and salt over mixture. Mix well. Shape mixture into 4 individual ½-inch thick burger patties. Set aside.
3Make the red pepper relish: Boil water and add chopped peppers, jalapeños, and shallots. Turn off heat and set aside for 10 minutes. Strain mixture. In a separate pot, add the vinegar, monkfruit sweetener, and salt. Bring to a boil and add the cashews and pepper mixture. Turn down the heat to simmer for 10 to 15 minutes. Very little liquid should remain. Cool down. Then, add the remainder of the ingredients. Stir and place in the refrigerator.
4Slice red onions and sauté in a pan with 1 tablespoon of olive oil on medium to high heat. Set aside.
5Heat a grill or large pan on low to medium heat and add the remaining 1 tablespoon of olive oil. Sear burgers on both sides (about 5 to 10 minutes on each side). Cook all the way through until they reach 165°F degrees.
6Place burgers on a plate to rest for 5 minutes. Serve on a bed of butter lettuce leaves and top with pepper relish.
