Recipe: Chocolate-Covered Strawberry Freezer Fudge

You can whisk together a batch of this gorgeous dairy-free fudge recipe in just 5 minutes! Even better, you can enjoy it guilt-free because it has no added sugars and plenty of healthy superfoods.

Tangy freeze-dried strawberries, creamy coconut oil, nutty almond butter, and rich cacao powder come together for a quadruple helping of tasty nutrients. Not that you’ll care after the first bite!

One note about sweeteners: you can take your pick here. You can use monk fruit (a.k.a. luo han guo) or stevia – just sweeten to suit your taste. If you’re like me and don’t have as much of a sweet tooth, you may opt for less sweetener.

This recipe also works well with freeze-dried raspberries, cherries, or blueberries, so take your pick! If you like extra crunch, try adding 2 tablespoons of chopped nuts or a tablespoon of finely chopped cacao nibs to your fudge.

Chocolate-Covered Strawberry Freezer Fudge

Stir up a batch of this scrumptious dairy-free fudge in minutes! The crunch of freeze dried strawberries is perfect with melt-in-your mouth chocolate flavor.

  • Prep: 5 mins
  • Cook: 2 hrs
  • Yields: 18 Squares

Ingredients

1/2 cup coconut oil

1/2 cup creamy unsalted unsweetened almond butter

1/2 cup raw cacao powder (preferably organic)

1/4 tsp sea salt

1 tsp real vanilla extract

1 tsp monk fruit extract or liquid stevia (to taste; equivalent to 1/2 cup sugar)

1/2 cup freeze-dried strawberries, crushed

Directions

1Line a loaf pan with parchment paper and set aside.

2In a small saucepan, combine the coconut oil, almond butter, cacao powder, and salt.

3Heat over medium heat, whisking until completely smooth. Do not bring to a boil.

4Remove from heat and stir in sweetener and vanilla extract.

5Pour into prepared pan and sprinkle on freeze-dried strawberries.

6Place in fridge, and let set for at least 2 hours.

7Cut into 18 squares or with heart cookie cutters before serving.

8Store in fridge or freezer.
