Recipe: Lemony Roasted Artichoke Hearts

by JJ Virgin on February 9, 2017

This is one of those side dishes that makes a big impact with very little effort. Less than five minutes of prep, then let a hot oven do the rest of the work!

Artichoke hearts are filling because of their high fiber content, and they’re also a good source of the antioxidant vitamin C. That’s good news for your cellular health. The addition of fresh lemon juice and zest really plays to the artichokes’ strengths, resulting in a light, tangy recipe that works beautifully next to richer main dishes like steak or seafood.

Lemony Roasted Artichoke Hearts joins Pan-Seared Scallops with Bacon and Spinach; Grass-Fed Beef Tenderloin Steaks with Sauteed Shiitakes; and Chocolate Avocado Mousse with Cacao Nibs on our Romantic Night In menu.
