Recipe: Pumpkin Spice Protein Cookie Bites

Pumpkin is the most amazing food! It’s full of so many good things, including age-fighting antioxidants, fiber, and an incredible boost of vitamin A.

In this awesome recipe for Pumpkin Spice Protein Cookie Bites, pumpkin gets together with its superfood friends to create a gluten-free treat that’s perfect for fall! You’re going to love the blend of almonds full of omega-3s, immune-boosting coconut oil, and crunchy cacao nibs.

The most important ingredient in these cookie bites is my All-In-One Protein Shake powder – use your choice of chai or vanilla to add the clean, lean protein you need to burn fat and stay energized. While other desserts slow you down, this recipe is the perfect fuel for your busiest days.

Pumpkin Spice Protein Cookie Bites

These gluten-free, dairy-free cookie bites are full of amazing pumpkin spice flavor, fun texture, and fabulous nutrition for the perfect autumn treat!

  • Yields: About 20 bites

Ingredients

2 scoops JJ Virgin Vanilla or Chai All-In-One Protein Shake Powder*

1/2 cup almonds

1 cup cacao nibs

3/4 cup gluten-free organic rolled oats (not quick cook oats or instant oatmeal)

1/4 cup unsweetened almond butter

1 cup canned pumpkin puree (not pumpkin pie filling)

2 tbsp coconut oil

2 tsp pure vanilla extract

3/4 tsp ground cinnamon

1/8 tsp ground clove

1/8 tsp ground nutmeg

dash sea salt (or to taste)

cacao powder, ground almonds, or shredded unsweetened coconut (for rolling)

Directions

1Pulse the oatmeal, almonds, and cacao nibs in a food processor until the size of small crumbs.

2Add the remaining ingredients, and pulse until well-combined and mixture holds its shape when pressed together. (Be careful not to over-process.)

3Roll the mixture into 1-1/2 inch balls. If desired, roll the finished bites in organic cacao powder, unsweetened shredded coconut, or ground almonds.

4Transfer to fridge to chill completely, then enjoy. Store covered in refrigerator for up to one week.
