Recipe: 10-Minute Coco-Raspberry Protein Truffles

These little goodies are as easy on the eyes as they are to eat! With rich undertones of vanilla and nutty flavors from coconut and almond butter, the sweet-tart raspberry center is sure to get your attention.

They’re the perfect protein-packed treat for any age. And the best part is you can whip up chewy bites in just 10 sweet minutes!

Our protein truffles are gluten- and dairy-free, low sugar-impact, plus high in heart-healthy coconut oil, protein, and fiber – everything you need to roll steadily through your day. You can make a quick batch on Sunday, and be ready to grab-and-go on the fly during the week.

There are so many ways to customize this recipe! If the raspberry zing in the center isn’t your thing, try replacing it with a freeze-dried strawberry or  stevia-sweetened mini chocolate chips. You can also roll your finished truffles in crushed almonds or cacao powder instead of coconut.

Chocoholics can swap out the vanilla protein powder for chocolate or even mix in an extra tablespoon of cacao powder. The important thing is that you use a high-quality, clean protein powder (without whey, soy, sugar, or GMOs) to give these truffles the nutritional oomph you’re after.

Pro Tip:

Not all dried fruit is created equal! Be sure to choose freeze-dried over regular dried fruit because the freeze-drying process doesn’t concentrate the fructose in the same way that traditional drying does.

Freeze-dried also lets you skip that sugary hit that makes you crave more sugar later. 10-Minute Coco-Raspberry Protein Truffles

These no-bake goodies are packed with protein and healthy omega 3s, and come together in just 10 little minutes!

  • Prep: 10 mins
  • Cook: 1 hrs
  • Yields: 24 truffles (6 servings)

Ingredients

2 scoops JJ Virgin All-In-One Vanilla Plant-Based Protein Shake Powder*

1/4 cup ground flaxseed

1/2 cup gluten-free organic rolled oats (not quick-cook oats or instant oatmeal)

3/4 cup unsweetened almond, cashew, or sunflower seed butter

3 tbsp coconut oil, melted

2 tsp real vanilla extract

Dash of stevia or monk fruit extract (if desired)*

Dash of sea salt

1/4 cup freeze-dried raspberries (reserve for the center)

1/2 cup organic unsweetened finely shredded coconut flakes (reserve for rolling)

Directions

1In a food processor, pulse the oatmeal until it’s the size of small crumbs.

2Combine all other ingredients except for raspberries and coconut flakes in the food processor, and pulse until well combined.

3Roll the mixture into 1-inch balls, then flatten slightly and place a freeze-dried raspberry in the center before reforming into a ball surrounding the berry. Roll the finished truffles in finely shredded coconut flakes.

4Place in fridge to chill for an hour before serving.

5Store leftovers in the fridge for up to one week in an airtight container, or freeze for up to one month.
