Recipe: Neapolitan Protein Pops

Talk about nostalgia! I can almost hear the jingle of the ice cream truck…

Even if you have to say goodbye to summer, that doesn’t mean you have to say goodbye to frozen desserts, especially when they’re this healthy. We’ve reinvented this old-time classic dessert into a guilt-free treat that is sure to satisfy the kid in you. (And if the kids or grandkids are around, make a double batch so you will want to share!)

These Neapolitan Protein Pops are packed with protein, healthy fats, antioxidants, vitamins, and fiber. This recipe calls for JJ’s All-In-One Protein Shake powder, which adds superstar nutrition and such a creamy texture. You can honestly and happily have one of these pops for breakfast! 

No matter which shake powder you choose, just be sure to use clean protein, which means no dairy/whey or soy (the top offenders for food intolerances and weight gain). And steer clear of anything with more than 3 grams of sugar per serving to avoid a blood glucose and insulin roller coaster. 

Last but not least, remember to use BPA-free popsicle molds!

Pro Tip: Simply double the recipe and enjoy a neapolitan smoothie while these creamy, sweet pops are in the freezer. That’s the best kind of multi-tasking!

Creamy and delicious, these dairy-free protein pops are a healthy mix of Neapolitan ice cream in popsicle form. They’re packed with nutritious protein, fiber, and omega-3’s.

Ingredients

CHOCOLATE LAYER:

1/3 cup unsweetened vanilla coconut or vanilla almond milk

1/3 cup unsweetened dairy-free nut milk yogurt

1 scoop JJ Virgin Chocolate All-In-One Protein Shake* (your choice of protein type)

2 tsp raw cacao powder

Dash sea salt

Dash of monk fruit sweetener

STRAWBERRY LAYER:

1/3 cup unsweetened vanilla coconut or vanilla almond milk

1/3 cup unsweetened dairy-free nut milk yogurt

1 scoop JJ Virgin Vanilla All-In-One Protein Shake* (your choice of protein type)

1/4 cup frozen organic strawberries

VANILLA LAYER:

1/3 cup unsweetened vanilla coconut or vanilla almond milk

1/3 cup unsweetened dairy-free nut milk yogurt

1 scoop JJ Virgin Vanilla All-In-One Protein Shake* (your choice of protein type)

1 tsp pure vanilla extract

Directions

1Place all the ingredients for the chocolate layer in the blender until well mixed.

2Pour chocolate mixture evenly into 6 popsicle molds and freeze for 1 hour.

3Rinse your blender.

4While the first layer partially freezes, blend the ingredients for the vanilla layer and store in a covered jar in the refrigerator; repeat for the strawberry layer. (If you go in that order, you don’t have to rinse your blender between layers!)

5When the chocolate layer has had an hour in the freezer, pour in the strawberry mixture, and add the popsicle sticks; return to freezer for 1 hour.

6Last but not least, pour in the vanilla mixture and freeze until firm. Enjoy!
