Recipe: Shakeberry Pie Parfait

Here’s three hints about the secret ingredient in these Shakeberry Pie Parfaits:

1) It’s got delicious vanilla flavor.

2) It’s full of superfoods.

3) It’s part of a healthy breakfast. (Or dessert!)

Give up? It’s vanilla protein powder! Specifically, my All-In-One protein, available in Paleo-Inspired or Plant-Based.

And thanks to another half dozen superfood ingredients, these parfaits not only have clean protein but plenty of filling fiber and healthy fats.

You can easily make them in the morning, so a guilt-free treat is waiting after dinner. Or reverse that and make them before bed, then enjoy a parfait as part of your healthy breakfast tomorrow!

That’s the beauty of great recipes like this one: these parfaits are simple, versatile, and completely delicious. They satisfy that itch for something sweet and indulgent without doing your body any harm. In fact, they’re full of ingredients that can help boost your metabolism and energy!

The recipe can easily be doubled or even tripled, if you’re expecting a crowd. You can also customize it with pecans or almonds instead of walnuts.

Check out the secret ingredient in this healthy, protein-packed dessert parfait recipe. It’s gluten-free, dairy-free, and thoroughly delicious!

  • Prep: 1 hr 15 mins
  • Cook: 10 mins
  • Yields: 2 Servings

Ingredients

1/2 cup frozen organic berries

1/2 cup frozen organic cherries

1/2 cup (4 oz.) unsweetened coconut milk (from a carton, not full-fat canned)

1 scoop JJ Virgin Vanilla All-In-One Protein Shake powder* (your choice of protein type)

1 1/2 tbsp chia seeds

2 tbsp chopped walnuts

1/2 tsp ground cinnamon

1/2 tsp monk fruit extract or stevia (if desired)

pinch sea salt

1/2 cup whipped coconut cream (recipe below)

Directions

1Warm cherries, berries, and coconut milk in a small saucepan over medium-low heat, until steaming; remove from heat.

2Pour off a few tablespoons of liquid from the pan into a small mixing bowl and combine with the All-In-One Shake, cinnamon, sweetener, and sea salt.

3Whisk until smooth, and add back to berry mixture.

4Stir in chia seeds and one tablespoon of the chopped walnuts; mix thoroughly.

5Refrigerate shakeberry mixture for at least an hour or as long as overnight, until thickened and cooled.

6To serve: Place half of the shakeberry mixture each into 2 small glass bowls.

7Top each parfait with half the whipped coconut cream.

8Sprinkle the final tablespoon of chopped walnuts evenly over the 2 parfaits and serve!

This dreamy, dairy-free whipped concoction makes the perfect topping for any drink or treat. It's a beautiful cloud of naturally sweet coconut.

Virgin Diet compliant: Cycles 1, 2, and 3
Sugar Impact Diet compliant: Cycles 1, 2, and 3

  • Yields: 1/2 cup

Ingredients

1 scoop JJ Virgin Vanilla All-In-One Protein Shake powder* (your choice of protein type)

1 (14 oz.) can full-fat unsweetened coconut milk, refrigerated at least 12 hours

1 tsp real vanilla extract

1/2 tsp monk fruit extract or stevia (optional, to taste)

Directions

1Open the can and drain off the liquid. (Save it to use in protein shakes!)

2Then scoop the firm coconut meat into a medium bowl; add vanilla and monk fruit extract or stevia.

3Beat with an electric mixer on medium-high speed until completely whipped and thick.

4Refrigerate until ready to use.
