Recipe: Vanilla Coconut Smoothie Bombs (A Protein Shake Shortcut)

As if protein shakes weren’t convenient and simple enough, along comes smoothie bombs!

So what is a smoothie bomb? It’s a frozen little nugget with all the healthy fats and fiber you need for a nourishing protein shake: pre-measured, pre-mixed, and so easy to make. These little beauties mean it’s even faster to blend together a delicious, nutritious meal!

If you’re searching for a way to get your family excited about pitching in with meals or eating healthier, this is the perfect way to start. There’s no cooking, only a few dishes to wash, and they can help make the protein shakes, too!

To use your smoothie bombs, just add one to the blender along with high-quality protein powder, a cup of frozen organic fruit (such as berries, cherries, or peach slices), and 10 ounces of coconut or nut milk. *

A word about the nut milk you use: be sure it’s unsweetened, and choose the kind in the carton, not the can – sometimes called “coconut milk beverage.” Canned coconut milk is far too high in fat to be a smart option here.

Vanilla Coconut Smoothie Bombs (A Protein Shake Shortcut)

These scrumptious vanilla coconut smoothie bombs are so easy to stir together, and they make it even faster to blend together a healthy, tasty protein shake.

  • Prep: 5 mins
  • Yields: Makes 6 balls (enough for 6 smoothies)

Ingredients

6 tbsp coconut butter

3 tbsp ground flaxseed

6 tbsp sulfite-free all-natural dried unsweetened shredded coconut

2 tbsp unsweetened vanilla coconut milk (from a carton, not a can)

1 tbsp real vanilla extract

Directions

1In a medium mixing bowl, stir together the ingredients until thoroughly mixed.

2If mixture is still dry and powdery, add an additional 1-2 teaspoons coconut milk.

3Shape mixture into 6 balls, each about 2 tablespoons.

4Place on parchment-lined plate and freeze until firm, at least 1 hour.

5Transfer to an airtight bag or container and freeze up to 6 weeks.

6To use, put 1 smoothie ball, 1 cup frozen organic berries, and 2 scoops JJ Virgin All-In-One Protein Shake powder* (your choice of protein type and flavor) in a blender with 10 ounces of unsweetened coconut or nut milk and blend until smooth.

7Your smoothie can be thinned with cold filtered water or thickened with ice cubes. So quick and easy!
