Ingredients
1¼ lb grass-fed & grass-finished beef chuck roast or stewing meat, cut into cubes (1-2" thick)
1 medium sweet white onion, cubed
Directions
1Heat avocado oil in a large pot or Dutch oven on medium heat.
2Add cubes of beef and sprinkle 1 tsp salt and pepper on top. Brown on all sides. Remove beef and set side on a plate.
3Add onion, carrots, celery, mushrooms, red bell pepper, garlic, ginger, tomato paste, and sweetener to the pot. Stir well. Cook for 5 minutes.
4Add beef back into the pot with the vegetables. Add remaining salt, turmeric, paprika, cumin, cinnamon, and cloves, and stir.
5Add the beef broth and bring to a boil.
6Cover and reduce heat to low and simmer for about 1½ hours, or until beef is soft.
7Top with fresh parsley and enjoy!
