Chimichurri Turkey Salad

Makes 4 servings

Ingredients

1 lb leftover turkey, shredded or diced

¼ cup chopped chives

¼ cup chopped celery

2 roasted red peppers in a jar, chopped

1 avocado, chopped

½ cup toasted pecans, chopped

¼ cup organic hemp hearts

Chimichurri Sauce

1 cup Italian flat-leaf parsley, chopped

1 tbsp fresh oregano, finely chopped

2 tbsp shallots, finely chopped

2 cloves garlic, minced

1 red Fresno chili pepper, seeded and finely diced

¼ cup extra-virgin olive oil

3 tbsp red wine vinegar

¼ tsp sea salt

Directions

1Place chimichurri ingredients in a glass jar and shake vigorously for 1 minute.

2Place turkey and remaining ingredients in a mixing bowl. Add chimichurri sauce and mix. Divide into four bowls and serve.

3Store leftovers in an airtight container in the refrigerator for up to 4 days.
