Gluten-Free Chai Apple Butter Overnight Oats

Makes 4 servings


1 cup diced organic apples

1 tbsp ghee

2 tsp Lakanto® Golden Monkfruit Sweetener

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ground cardamom

1 tsp vanilla extract

2 cups Bob’s Red Mill® Gluten-Free Old-Fashioned Rolled Oats

2 tbsp chia seeds

4 cups plant-based milk (I like Good Karma)

2 scoops Reignite Wellness™ Vanilla All-In-One Shake

1 scoop Reignite Wellness™ Extra Fiber

1/4 tsp ground cardamom

4 tsp Lakanto® Golden Monkfruit Sweetener

4 tbsp unsweetened almond butter

NOTE: You will need (4) 16-oz mason jars with lids.


1Make the apple butter topping: Peel and core apple. Slice and chop into small pieces. Heat a pan up on medium heat and add ghee to the pan. Add chopped apples, cinnamon, and nutmeg. Turn heat down to low and cook for 10 minutes. Take off heat. Add vanilla extract and stir. Allow to cool down.

2Add ½ cup of oats and ½ tbsp chia seeds to each jar.

3In a blender, add milk, All-In-One Shake, Extra Fiber, cardamom, and monkfruit sweetener. Blend on high for 1 minute. If the mixture is too thick, add more milk.

4Pour mixture equally into each jar. Add 1 tbsp of almond butter and 2 tbsp of apple butter topping on top.

5Place lid on each jar and shake vigorously. Place in fridge overnight. Enjoy the next day!
