Lemon Poppy Seed Balls

A blend of our vanilla Plant-Based All-In-One protein, blanched almond flour, poppy seeds, and lemon zest. Poppy seeds provide a rich source of thiamin, folate, and several minerals including magnesium and zinc. Poppy Seeds may help promote digestion, support skin and hair health, along with other health benefits.
- Yields: 8 Servings
1Combine 2 teaspoons of poppy seeds with 1 teaspoon lemon zest. Set aside.
2In a large bowl, combine all the remaining ingredients. Knead together with your hands.
3Scoop out 1 tablespoon of mixture and roll into a ball. (I use a small cookie scoop to do this.)
4Carefully roll balls in poppy seeds and lemon zest. (You may have to press the mixture into balls and roll them back into a round shape.)
5Store balls in an airtight container. Place in the refrigerator for up to a week.
