Breakfast Millet Cakes

Millet is a good gluten-free source of protein, fiber, key vitamins, and minerals.

Makes 2 servings

Ingredients

1/2 cup Arrowhead Mills organic millet flour

2 scoops Reignite Wellness Vanilla All-In-One Shake (Plant-Based) OR Paleo-Inspired

2 scoops Collagen Peptides Powder

1 scoop Extra Fiber

1 ¼ cup unsweetened plant-based milk

2 Tbsp Lakanto® Golden Monkfruit Sweetener 1:1 Sugar Substitute

1 tsp aluminum-free baking powder

1/2 tsp cinnamon

1 tsp freshly grated lemon zest

Non-stick olive oil cooking spray

1/2 cup blueberries and raspberries

To top breakfast millet cakes: Lakanto® Sugar-Free Maple Syrup Sweetened with Monk Fruit, almond butter, ghee, extra berries (optional)

Directions

1Mix all ingredients in the bowl, except for the berries.

2Spray a non-stick pan with olive oil cooking spray. Heat on medium.

3Pour ½ cup of batter onto the pan. When edges are brown, flip over and cook for 2 more minutes.

4When all millet cakes are finished, top with fresh berries and Lakanto® maple syrup.
