

Coffee-Rubbed Pork Tenderloin with Savory Apples

Ingredients

2 apples (Gala or Honeycrisp), peeled, cored, and thinly sliced
2 tbsp fresh sage leaves, chopped
2 tsp fresh thyme leaves, chopped

Directions
1Preheat the oven to 375°F and line a small sheet pan with parchment paper.
2In a small bowl, mix the coffee, sea salt, black pepper, ground coriander, and cumin. Rub the mixture generously over the entire pork tenderloin, pressing gently to ensure it sticks. Place on the prepared sheet pan.
3Bake for 20–25 minutes, or until the internal temperature reaches 145°F. Remove from the oven and let the pork rest.
4In a small pot, melt the ghee over medium heat. Add the chopped sage and thyme leaves, cooking for about 1 minute until fragrant. Add the sliced apples, sea salt, cinnamon, nutmeg, vanilla syrup, and apple cider vinegar. Stir to combine.
5Cook over low heat for about 10 minutes, or until the apples are tender and well coated with the spices.
6Slice the pork tenderloin into ½-inch slices. Serve the pork slices on plates, topped with the savory apples.
7Refrigerate leftovers in an airtight container for up to 4 days.
