Grass-Fed Bison Kofta Kebab with Roasted Tomato Chimichurri

Middle Eastern spices flow throughout these tasty meatballs, grilled to perfection. For more intensity, top with a homemade Roasted Tomato Chimichurri Sauce. I serve my Kofta over quinoa, hummus, sliced cucumbers, and radishes, topped with my favorite lettuce greens.

  • Yields: 3 Servings

Ingredients

1 lb grass-fed bison (alternately, you can use organic ground grass-fed beef)

1 onion (finely diced)

4 cloves of garlic (minced)

1/4 cup Italian flat-leaf parsley (finely chopped)

1/4 cup mint (finely chopped)

1 scoop Extra Fiber*

1 tbsp extra-virgin olive oil (plus extra for coating before grilling)

4 metal skewers or wooden skewers (soaked in water for an hour before grilling)

2 tsp allspice

2½ tbsp ground cumin

2 tbsp sumac

1 tbsp cinnamon

2 tsp ground cardamom

3 tsp paprika

2 tbsp pink Himalayan salt

1 tsp ground pepper

Directions

1Heat grill pan or grill to medium-high temperature. (This recipe can also be used in a grill pan on your stovetop and finished in the oven.)

2Mix spices together. Store in an airtight container. Note: You will only use 3 tablespoons of the mix for the organic ground grass-fed bison or beef.

3Place grass-fed bison or organic ground grass-fed beef in a bowl. Break it apart so you can easily distribute seasonings throughout.

4Sprinkle 3 tablespoons of spices, onion, garlic, parsley, mint, Extra Fiber, and olive oil.

5Mix and knead into grass-fed bison or organic ground grass-fed beef. Make sure to distribute the spices evenly.

6Use extra spice if needed. We want those flavors to be intense!

7Use a scoop or your hands and shape into meatballs. Take each meatball and skewer it on a stick (about 4 to 5 meatballs per skewer). Then, slightly flatten all the way down to merge each meatball together on the stick. Repeat until all skewers have been completed.

8Marinate skewers for 1 hour or overnight.

9Right before grilling, rub olive oil over skewers.

10Grill skewers (about 7 to 12 minutes each side, depending on heat level).

11Remove skewers off of grill. Let sit for 10 minutes.

12Spoon the Roasted Tomato Chimichurri Sauce (link at bottom) onto the plate. Place the skewer over it.

13Serve with quinoa, salad greens, hummus, sliced cucumbers, and radishes as a well-balanced Virgin Diet plate.

14Store leftovers in a container for up to 4 days.
