Lamb Sliders With Coconut Tzatziki

Ingredients

Coconut Tzatziki Sauce

8 oz. full-fat coconut cream

2 tbsp fresh dill, chopped

2 garlic cloves, minced

¼ teaspoon salt

1 Meyer lemon or regular lemon, juiced

Lamb Burgers

1 tsp avocado oil (+ 1 tbsp more to cook the burgers)

1¼ lb ground lamb

1 small shallot, finely diced

4 cloves garlic, minced

3 tbsp fresh Italian flat-leaf parsley, finely chopped

3 tbsp fresh mint, finely chopped

2 scoops Reignite Wellness™ Extra Fiber

1 tbsp ground cumin powder

1 tsp granulated garlic powder

1 tsp granulated onion powder

½ teaspoon ground black pepper

½ tsp sea salt

Directions

1Whisk together tzatziki ingredients in a medium mixing bowl. Place in the refrigerator to chill until lamb sliders are ready to serve.

2In a large mixing bowl, add all the ingredients for the sliders. With your hands, mix everything together by kneading into the ground lamb. This helps distribute the spices more equally.

3Heat avocado oil in a frying pan over medium heat. Scoop out ¼ cup at a time of the burger mixture and shape into patties with your hands. Place in the hot pan and cook for 5 to 7 minutes on each side. When done, take patties out and rest on a plate.

4Serve patties on a plate drizzled with tzatziki. Top with your favorite veggies (I recommend diced cucumbers, tomatoes, and green leaf lettuce).

5Refrigerate leftovers in an airtight container for up to 4 days.
