Recipe: Pico de Gallo Avocado

This recipe is an even healthier twist on traditional pico de gallo. It’s made more nutritious by the addition of healthy omega-3s from avocado, and the end result is a delicious cross of salsa and guacamole.

Pico de Gallo Avocado

Inspired by Tex-Mex flavors, this fresh, easy recipe comes together in minutes and makes the perfect healthy addition to your next fiesta or potluck.

  • Prep: 15 mins
  • Yields: 4 to 6 Servings

Ingredients

1 lb Roma tomatoes, diced

1 red onion, diced

1 jalapeño, diced

1/4 cup fresh cilantro, chopped

1 1/2 tsp olive oil

1 avocado, diced

1/2 lime, juiced

Directions

1Combine the tomatoes, onion, jalapeño, cilantro, and olive oil in a bowl.

2In a separate bowl combine the avocado and lime juice (this will keep the avocado from turning brown).

3Stir the avocado and lime juice into the pico mixture. Enjoy with grilled chicken, shrimp, or fish.
