This recipe is an even healthier twist on traditional pico de gallo. It’s made more nutritious by the addition of healthy omega-3s from avocado, and the end result is a delicious cross of salsa and guacamole.
If you love avocados as much as I do, don’t forget to check out my favorite food hack to tell if they’re ripe (without cutting them!) and ripen them in less than 10 minutes if they’re not ready to eat.
1Combine the tomatoes, onion, jalapeño, cilantro, and olive oil in a bowl.
2In a separate bowl combine the avocado and lime juice (this will keep the avocado from turning brown).
3Stir the avocado and lime juice into the pico mixture. Enjoy with grilled chicken, shrimp, or fish
