1Preheat oven temperature 425°. Season lamb with spices and coat with olive oil. Place in the oven for 20-25 minutes. Lamb should reach an internal temperature of 145°. Take out of the oven to rest.
2Add olive oil to a large sauté pan on medium heat. Add the onion, carrots, bell pepper, and ginger to the pan and sauté for 3-5 minutes. Add the remaining ingredients and simmer on low heat for 20 minutes.
3Slice each lamb chop in between the bones. You should have 8 slices. Serve two slices per person.
4Place 1 cup of vegetables on each plate with lamb chops on top. Top with fresh chopped mint and serve.
