Jicama, Apple, and Pear Slaw

This crunchy, juicy slaw recipe is perfect for tailgating or entertaining – it’s tasty, satisfying, and completely dairy-free.

Sugar Impact Diet compliant: Cycles 1 and 3

  • Prep: 45 mins
  • Yields: 4 servings

Ingredients

1 cup shredded red cabbage

1 cup shredded green cabbage

1 medium apple, unpeeled, cored, and cut into thin matchsticks

1 medium ripe pear, unpeeled, cored and cut into thin matchsticks

1/2 small jicama, peeled and cut into thin matchsticks (about 1 cup)

3 green onions, chopped

4 tsp cider vinegar

1 tbsp macadamia nut oil

1 tbsp chopped fresh cilantro

1/4 tsp sea salt

Directions

1Toss all the ingredients together in a medium bowl.

2Let stand 30 minutes, tossing occasionally, to allow the flavors to bloom. Serve.
